Ham and Bok Choy Fried Rice
Ham and bok choy go together really well. This fried rice is made from day old, cold rice, chopped bok choy, diced ham and onions, a bit of soy sauce. It's tasty and easy to make. Here's how:
Easy Ham and Bok Choy Fried Rice
(serves 2 or three. Double the recipe to serve more)
1-cup day-old, cold cooked rice
1/2-cup diced, cooked ham
one or two bok choy, cleaned, drained, and chopped
1/2-cup diced onion or scallions (green parts included)
1-TBS soy sauce
salt & pepper
1-TBS coconut or peanut oil
Melt/heat oil in a wok or skillet. Add the diced onion and stir fry until almost translucent. Add the ham and stir fry for two or three minutes. Add the bok choy and stir fry until slightly limp. Add a few dashes of salt and pepper and stir fry in.
Add the cold rice. Break up and stir in. Add the 1-TBS soy sauce, or to taste. Serve hot.
COOKERY NOTES: For the best, "no-mushy" fried rice, cook the rice a day ahead and keep refrigerated until ready to cook.
You can also vary the recipe to make Easy Veggie Fried Rice. Instead of bok choy add 1/2-cup frozen, mixed veggies to the diced onion. Stir fry the veggies until thawed and hot, then continue with the recipe.
