A zesty-sweet dressing makes this salad sparkle!
This is a good salad on its own or paired with a hot Winter soup.
Recipe: Apple, Avocado, & Walnutty Salad (serves one or more)
For each serving...
2 or 3 leaves Romaine, torn into bite size pieces
2 leaves red lettuce, torn into bite size pieces
1/2- red apple, chopped
1/2-avocado, chopped
1/4-cup raw or toasted walnuts, chopped
1 slice of red or white onion, quartered
Freshly ground coarse black pepper
Salt to taste, optional
Dressing:
1/2-cup olive oil
3-TBS red wine vinegar
1-TBS lemon juice
1-TBS agave syrup or honey
1/2-tsp salt
1/2-tsp dry mustard
1/2-tsp onion or shallot, finely minced
Assemble all ingredients in a jar, shake, and chill for 30 minutes before using to allow flavors to blend. Shake well again before applying to the salad.
After dressing each salad, add a slight sprinkle of salt if desired, and a generous grinding of coarse black pepper.
