As this spaghetti squash matures it will turn yellow and the skin will harden.
Young, immature "winter" squash can be as tasty as "summer" squash! While not true of all varieties, I recently discovered that young, small and tender (skin easily pierced with a finger nail) spaghetti squash are similar in taste and texture to zucchini but are less watery.
Mature spaghetti squash make a nice substitution for pasta when baked or microwaved and the flesh shredded with a fork.
Spaghetti squash at any stage of maturation may be stuffed with meat, sauce and/or grain as a main dish.
Spaghetti squash are hardier and more pest resistant than many squash varieties.
Mature (skin hardened) spaghetti squash are good "keepers", storing for many months in a pantry or cellar.
Spaghetti squash are an heirloom variety but make sure you're not getting F1 hybrids if you want to save seeds!
Spaghetti squash are a "pepo" variety, as are most pumpkins and zucchini, and will interbreed with them.
Spaghetti squash are a new favorite of mine!
